Recipe: Party Ring Tray Bake...

A few months ago, I saw this delicious creation over on Benefit's Instagram and despite not knowing what it actually was or what it contained, I decided to have ago at baking something similar myself and that's where Party Ring Tray Bake came from!

Ingredients:
For the base
3 tablespoons butter
1 pack of marshmallows
6 cups of rice krispies

For the topping
2 large bars of white chocolate
1 pack of party rings

Instructions:
Step One // Melt 3 tablespoons of butter in a pan on a low heat. 
Step Two // Once the butter has melted, mix in the marshmallows - continue to stir to ensure they don't stick to the pan and burn.
Step Three // Turn off the heat and mix in the rice krispies until fully coated.
Step Four // Press the mixture into a tray and leave to cool in the fridge - this takes about 1 hour. 
Step Five // Once your base has set, melt your 2 bars of chocolate over a pan. Then pour this over your topping.
Step Six // Whilst still melted, break up the party rings and scatter them on top of the chocolate.
Step Seven // Leave to cool and then cut into squares. 

I was very pleased with how this turned out and it tasted yummy!

Back from a Blogging Break...

Some of you may have noticed (then again maybe not), I've been absent from my blog lately; for almost two months now, I haven't updated my content and life just seemed to take over. 

Back in September, my Nana was taken into hospital and was very ill (thankfully she's fine now) and then the following week I went back to university into my second year and since then, I feel like I haven't had a moment to myself.

My motivation levels completely dropped and my stress levels rose, I wanted to blog but at the same time I didn't. I was seriously lacking in inspiration for posts and didn't want to just upload posts for the sake of it, when I knew I wasn't happy with them. 

Despite still being bogged down with uni work, I finally feel motivated to start blogging again as it's something I really enjoy doing so hopefully from this week, I'll be back to my usual 3 posts per week (Monday's, Wednesday's and Friday's).

Hopefully I'll be back into the swing of things soon!

What I Got For My 20th Birthday...

On Thursday the 10th September, I turned 20, the years just seem to be flying by, it doesn't seem 5 minutes since I  was becoming a teenager and now my teenage years are over. Rather than dwell on the fact I'm no longer a teenager,  I decided to put together a list of things I'd like to do in my 20's which you can read here.  

I love seeing what people receive for their birthday's so in today's post I thought I'd share with you what I received. 
I am so grateful for everything I received from my amazing family and friends. And had a lovely birthday spent with them.

5 Things I Want To Do in My 20's...

Tomorrow I turn 20 which is quite a scary thought considering it feels like yesterday, I was turning 10 (yep everyone remembers the excitement of reaching double figures!) I'm not quite sure how I feel about turning 20, to be honest, I would have been quite happy remaining 18 but wouldn't a lot of people?!
However, I am quite excited to see what the next 10 years of my life bring; a lot of people say your twenties are the 'defining decade'. In today's post, I'm going to share with you 5 things I'd like to do in my twenties...

Graduate and get job I love (but don't settle) | start my second year at university in twweeks time meaning I'm only two years from graduating (one if I don't do a placement). Once I've finished my degree, it's too early to say whether I plan on doing a masters but regardless, I hope to find my dream job in my twenties and keep working my way up the ladder.

Get over my fear of flying and travel | I've never been on an aeroplane (yep, that's right, never!) Therefore, I can't really say it's the flying I'm scared of, more fear of the unknown I suppose. In my twenties, this is definitely a fear I want to overcome because I feel like I'm missing out on so much beauty in the world. When I do eventually get myself onto a plane, I'd love to visit Italy, New York, and Australia. 

Take care of my body | Everyone comes in different shapes and sizes (it would be a very boring world if we all looked the same!) So at 19 years and 364 days old, I think it's finally time for me to accept I'm never going to be super skinny. Just over 3 months ago, I rejoined my local gym and I've discovered a new love for fitness, I try to go at least 3-4 time a week and spinning has got to be my new favourite thing to do - I actually look forward to going! In my twenties, rather than constantly focusing on my body hangups, I want to learn to accept my body (flaws an all) and take care of it rather than striving for something that jut isn't achievable - with hips like mine, I'm never going to be a size 8 and I'm actually OK with that! 

Get my own home/flat | Right now, I like living at home but one thing I definitely want to do in my twenties is get a place of my own (I already dream about decor and pin about it on my Pinterest) I particularly envy people with beautiful rooms turned into dressing rooms. That's the dream right there!

Just live life and enjoy it   | I just want to spend the next 10 years of my life, loving it and living it. I don't want to be fretting about things like marriage and babies, because lets face it these things happen when they happen - you can't really say 'in 5 year time I want to be married with a baby' especially if you don't even have a partner.


So there you have 5 things I'd like to focus on throughout my twenties

Recipe: White Chocolate & Raspberry Muffins...

I love baking, especially muffins, my mam's favourites are White Chocolate & Raspberry so I thought I'd share the recipe with you too...

Ingredients:
300g plain flour
1tbsp baking powder
100g caster sugar
100g butter
1tsp vanilla extract
2 large egg
200ml semi-skimmed milk
150g fresh raspberries 
100g white chocolate 

Intructions:
Step One // Preheat the oven to Gas Mark 6/200c/400f.
Step Two // Sieve the flour and baking powder into a bowand add the sugar. 
Step Three // Melt the butter in a pan on a low heat.
Step Four // In  separate bowl, mi together the melted butter, milk, egg and vanilla extract.
Step Five // Pour into the powdered ingredient and stir together, don't over mix.
Step Six // Chop the raspberries into smaller pieces or leave hole depending on hat you prefer and chop the white chocolate. 
Step Seven // Fold the raspberries and white chocolate into the mixture.
Step Eight // Spoon the mixture into the muffin tins.
Step Nine // Bake in the preheated oven for 15-20 minutes until well risen, golden brown and firm to touch.
Step Ten // Leave to cool in the tin for 5 minutes then transfer to a wire rack for further cooling.

Tall Girl Problems...

I'm 5ft6/5ft7ish so I know I'm not the tallest person in the world but its still pretty damn tall and I'm definitely one of the taller ones in my friendship group. If you're a tall girl then I'm pretty sure you'll be familiar with the scenarios below...

1 | People are always commenting on how tall you are like you had no idea.
2 | And then there's people who always ask how tall you are.
3 | People asking how the weather is up there (my mam in particular thinks its funny to ask "Is it cold up there?" when I'm wearing heels) 
4 | Remember the maxi dress trend? Finding one that touched the ground was pretty much impossible. 
5 | Taking outfit pictures in the mirror = headless.
6 | You feel like everyone is looking at you, especially when you're on a night out (chances are, they aren't)
7 | Always being asked to reach for things on shelves or in cupboards. 
8 | Hugging people shorter than you is always awkward when they are boob height. 
9 | Looking like a giant next to your short friends.
10 | Getting annoyed when you see really short girls with really tall boyfriends. 

Despite all of these "problems", I love being the height I am, as I love having long legs!
